SINFO Rosado is an example of a clarete wine produced in the Cigales D.O. of northern Spain. Traditionally, winemakers from the area would co-ferment red and white grapes together on their skins producing a light red wine or a dark rosé with plenty of flavour and body, and call it ‘clarete’. That’s exactly what Bodegas Sinforiano is practicing today with the creation of their flagship wine, SINFO!
Co-fermenting three grapes together brings the best qualities from each varietal to the mix: Tempranillo gives colour and body, while Verdejo gives powerful flavours of peach and fennel, and Abillo provides beautiful aromatics. 100% of the juice that makes up SINFO is free-run, which refers to the wine that runs freely out of the tank due to gravity when you open the a valve after fermentation. This is said to be the “purest” expression of the wine. After collection, the wine is aged for 4 months on the lees to accumulate more flavours and round out the body. SINFO is meant to be consumed young while it’s fresh, and served chilled for optimal enjoyment.

The Cigales D.O. is a small wine region located just above the Duero River in northern Spain (continuation of Portugal’s Douro River), historically known for producing light red wines and dry rosé. The climate here is warm and dry, but is also considered to be high-altitude (up to 800m elevation). This mountain influence creates a rocky terroir for vines to struggle and allows the vineyards to cool down at night, preserving acidity in the grapes. In order to avoid the tremendous heat that the region experiences during the summers, most wineries were built underground dating back to the early 1000s, creating a gigantic maze of cellars underneath the towns of Valladolid. Over the years as heavier, oaked red wines were popularized around the world, clarete style wines from Cigales really only stayed popular within the domestic market. The region has been undergoing a renaissance in more recent years, with winemakers, like Sinforiano, focusing on modernizing their techniques while maintaining the region’s traditional winemaking heritage. This has resulted in the production of high-quality wines that have garnered attention and accolades both domestically and internationally. Located in the town of Mucientes, Valladolid (about a two hour drive north of Madrid), are the winery and vineyards of Bodegas Sinforiano. Established in 1966 by Sinforiano Vaquero and Daniela Gomez, having only a few rows of vines and an old underground cellar filled with cement tanks, the family has advanced their winery throughout the decades to become a modern business with state of the art technology and vineyards that now cover almost 200 acres – all the while, preserving their important winemaking traditions! Today, Sinforiano and Daniela’s four sons run the business. Sinforiano’s vineyards are mostly located on the slopes of Montes Torozos which reach an elevation of 800 meters above sea level. In addition to having a great variety of soil types to work with along this mountain range, the cooler temperatures from higher altitude and the cool Atlantic ocean breeze that sweeps through, both help to maintain acidity in the grapes – an important feature of Sinforiano’s wines. Even though the winery co-ferments a large percentage of their harvested grapes to stylistically acheive the clarete style, each vineyard is treated independently and carefully throughout the year. Modern technology has allowed for testing to discover which grape varietals function optimally on clay, limestone, or stoney soils. In addition to thoughtful viticulture techniques, Sinforiano also maintains a large focus on sustainable agriculture by discontinuing the use of chemical ferilizers or herbicides in the vineyards, using solar panels to power up to 60% of the winery and by creating a wastewater treatment facility on the property that uses natural sources (plants) to remove toxins.
